The first memories of Everardo Gaytán Rosales around agave and tequila begin in the fields of Jalisco: days from sunup to sundown, trails cut through ravines, old royal roads, and loads carried on muleback. In those years, the craft depended almost entirely on strength, experience, and the hands of the people who worked the land.

From his father, Don Lorenzo Gaytán, he learned that working the fields demands dedication, constancy, and respect for nature. Among the rows of agave he understood that every harvest takes time, and that no true process can be rushed.

Years later, as the representative of the second generation, he founded the producing house and took on the responsibility of preserving that knowledge. His principle was clear: respect the agave's timing, keep the essence of the process, and let nature take part in every stage, from cultivation through wild fermentation.

Everardo thus became the link between the first and the third generation. He carried knowledge inherited from the fields into a more contemporary and organized vision, adding planning, management, and identity without giving up the artisanal character that gave rise to the tequila family.

One of his greatest sources of pride is having received Don Lorenzo's knowledge, passed it on to his children, and seen a new generation refine it and take the distillery toward new possibilities, always with respect for its roots.

For Everardo, every bottle holds something of that story: the memory of his father, the scent of wet earth, and years of patience before the first sip.
